Pomegranate Pecan Salad

 

Combining textures and flavors are two of my favorite qualities about salads. Poms bring crunchy and tart elements, as well as a pop of color. Add the remaining ingredients below and you have a Pomegranate Pecan Salad worthy of holiday celebrations.

Salad Elements

ARILS FROM ONE POMEGRANATE

BUTTER LETTUCE OR TRIPLE GREEN SALAD MIX

2 CANS MANDARIN ORANGES

2 C PECAN HALVES

FETA CHEESE CRUMBLES

2 PEARS OF CHOICE, THINLY SLICED

Ginger Dressing Elements

1/4 C EXTRA-VIRGIN OLIVE OIL

1 T APPLE CIDER VINEGAR

1 T DIJON MUSTARD

1 T MAPLE SYRUP OR HONEY

1 T FRESH GINGER, FINELY GRATED

1/4 TSP SEA SALT

1/4 TSP BLACK PEPPER

Directions

  1. In a small skillet over medium heat, add pecans and toss with a wooden spoon.

  2. Rinse and spin lettuce; place in large mixing bowl.

  3. Add pom arils, oranges, feta crumbles, and pear slices; toss to combine.

  4. Serve with ginger dressing on the side; salad will get soggy if you toss the dressing into it.
