Thousand Island Dressing

 

Sweet and creamy with a hint of tang, Thousand Island Dressing is a staple in my fridge. Not to sound pretentious (cue the "Steel Magnolias" movie line), but this really is one dressing that I will only consume if it's homemade; it makes all the difference in the world. It’s one of the few dressings whose flavor profiles are elevated when made fresh.

1/4 CUP MAYONNAISE OR VEGAN MAYO

3/4 CUP CHILI SAUCE

1/3 CUP GREEN OLIVES, PIMIENTOS REMOVED AND DICED

2 GHERKIN PICKLES, CHOPPED (OPTIONAL)

1 TABLESPOON ONION, GRATED (OPTIONAL)

1 TABLESPOON GREEN OLIVE JUICE

1 TEASPOON WORCESTERSHIRE SAUCE

1 LEMON, JUICED

1 TEASPOON SEA SALT

1/2 TEASPOON BLACK PEPPER

Directions

  1. In a large mixing bowl, add all ingredients and whisk well.

  2. Chill and serve.

Serve over Cobb salad, an open-faced chicken sandwich, or on your favorite burger.
