Poppy Seed Dressing

 

Pleasantly sweet with a seedy, translucent elegance, Poppy Seed Dressing pairs well with grilled peaches, roasted Brussels sprouts, and can be used as a marinade for fish!

 
 
Poppy Seed Dressing
 
 

Elements

1 CUP EXTRA-VIRGIN OLIVE OIL

1/2 CUP CHAMPAGNE VINEGAR

1/3 CUP CANE SUGAR

1 TABLESPOON POPPY SEEDS

1 TABLESPOON GRATED SHALLOT

1 TEASPOON DRY MUSTARD

1 TEASPOON SEA SALT

2 TABLESPOONS MAYONNAISE OR VEGAN MAYONNAISE, OPTIONAL FOR CREAMIER DRESSING

Directions

  1. Place the champagne vinegar, cane sugar, shallot, dry mustard, and sea salt to the bowl of a food processor or carafe of a blender.

  2. Blend for 30 seconds to combine ingredients.

  3. While machine is on, add oil in a thin, steady stream until combined.

  4. Transfer to a jar or bottle and chill prior to serving.
