Mint Chocolate Chip Frozen Custard
If you have a Ninja® CREAMi® Scoop & Swirl™ machine, Mint Chocolate Chip Frozen Custard will be your new obsession. I use a natural green coloring made from spirulina and turmeric and Ghirardelli© semi-sweet or dark chocolate chips; quality ingredients matter.
Vanilla Custard Elements
3 LARGE EGG YOLKS (60 grams)
1 TABLESPOON LIGHT CORN SYRUP
1/4 CUP GRANULATED SUGAR
1 CUP HEAVY CREAM
2/3 CUP WHOLE MILK
1 TEASPOON VANILLA EXTRACT
PINCH SEA SALT
Mint Chocolate Chip Elements
1/2 TEASPOON PEPPERMINT EXTRACT (3/4 tsp if you prefer it mintier)
2 TEASPOONS ORGANIC GREEN FOOD COLORING (add more if desired)
3-4 TABLESPOONS SEMI-SWEET OR DARK CHOCOLATE CHIPS
Directions
In a medium saucepan over medium heat, whisk yolks, corn syrup and sugar until smooth.
Add cream, milk, vanilla, and sea salt; mix to combine.
Cook over medium heat, stirring constantly, removing from the heat at 165°F and allowing the temp to slightly climb to 175°F.
Strain into 2 Ninja® carafes. You’ll have one vanilla custard and one mint chocolate chip in the end. If you want two mint chocolate chip custards, follow step 5 for each carafe.
In one of the carafes, add peppermint extract and food coloring; stir to combine. Do not add the chocolate chips at this step; they’ll just sink to the bottom.
Add the lids to each carafe, refrigerate for 3 hours FIRST, and then freeze for 24 hours.
After 24 hours, remove from the freezer and let sit on the counter for 10-15 minutes.
Remove the lid, place the container into the blender jar with handle, secure the blade lid, slide and lock into the Ninja Swirl™ machine, and press Soft Serve then select Frozen Custard. The machine will process it.
Once processed, remove the base from the machine, remove the blade lid, use a spoon the press a hole into the center of the frozen custard, and fill the hole with the chocolate chips.
Replace the blade lid, and lock the blender base back into the machine again.
Press Soft Serve and select Mix-In to sheer the chocolate into the blend.
Once mixed, remove the blender base from the machine, remove the blade lid, remove the carafe from the blender base, place the plunger lid onto the carafe, twist the carafe base to OPEN, lock into the Swirl position, pull the handle forward to distribue the frozen custard into your cone(s) of choice!
Once cones are filled, press the retract button, remove the carafe from the machine via the release button, remove the plunger lid, twist the base to CLOSE, replace the original carafe lid, and refreeze if you have leftovers.
