Roasted Garlic Hummus

 

How do you capture the essence of the Mediterranean? Smooth and savory Roasted Garlic Hummus; perfection by itself and a flavorful, nutritious addition to a plethora of meals. Try adding red bell peppers, avocados or sun-dried tomatoes to this recipe for flavor variations.

 
 
Roasted Garlic Hummus
 
 

Elements 

1 CAN GARBANZO BEANS, RINSED

1 LEMON, JUICED

2 TABLESPOONS TAHINI PASTE

4 TABLESPOONS OLIVE OIL, PLUS MORE FOR DRIZZLING

1/2 TSP BLACK PEPPER

1 TEASPOON SEA SALT

1 GARLIC BULB

1/2 TEASPOON PAPRIKA, PLUS MORE FOR GARNISHING

1/2 TEASPOON GROUND CUMIN

Directions

  1. Preheat the oven to 400° Fahrenheit.

  2. Slice the top off of the garlic bulb, drizzle with 2 tablespoons of olive oil, sprinkle with sea salt and black pepper, and place onto a silpat-lined baking sheet; roast for 30 minutes.

  3. Once cooled, squeeze roasted garlic from bulb into a ramekin and set aside.

  4. In the bowl of a food processor, add beans, lemon juice, tahini paste, remaining 2 tablespoons of olive oil, roasted garlic, paprika, and cumin; blend until smooth.

  5. Serve drizzled with oil and sprinkled with additional paprika, if desired.

May also be served as a spread on sandwiches, wraps, added to omelettes, and used in place of marinara sauce on pizzas.
