Raspberry Balsamic Vinaigrette

 

Tart and rich, Raspberry Balsamic Vinaigrette (RBV) has a bit more tartness to it than Strawberry Balsamic Vinaigrette (SBV), so I add monk fruit or organic, raw honey to sweeten it up a bit. You may also add champagne vinegar to the elements if you prefer a thinner consistency. If you prefer tart-sweet over sweet-sweet, this baby’s your go-to.

5 CUPS RASPBERRIES

1/4 CUP EXTRA-VIRGIN OLIVE OIL

4 TABLESPOONS BALSAMIC VINEGAR

1/4 CUP LOCAL HONEY

1/2 TEASPOON TARRAGON, FINELY CHOPPED

1/2 TEASPOON SEA SALT

1/4 TEASPOON BLACK PEPPER

4 OUNCES RAW HONEY OR MONK FRUIT

Directions

  1. In the bowl of a food processor, add all ingredients and blend until smooth.

Serve over pork cutlets, poached pears, ice cream, or freshly sliced avocados.
