Texas Pecan Pralines

 

Candy making takes time and patience. but the result is something much more satisfying than anything you could purchase. Texas Pecan Pralines are rich, brilliantly sweet and satisfyingly decadent. I do not like them to be chewy, but if you do, give this recipe a chance to win.

 
 
Texas Pecan Pralines

3 CUPS PECAN HALVES

2 CUPS CANE SUGAR

2 CUPS LIGHT BROWN SUGAR

6 TABLESPOONS LIGHT CORN SYRUP

1 TABLESPOON BUTTER

2 TEASPOONS MADAGASCAR BOURBON OR MEXICAN VANILLA EXTRACT

2/3 CUP WHOLE MILK


Directions

  1. In a large saucepan, combine all ingredients; stir well.

  2. Turn burner on to medium-high heat, and add a candy thermometer to the side of the saucepan.

  3. Bring mixture to a boil, stirring frequently, until the candy thermometer reaches 234°F.

  4. Remove the pan from heat, and stir continuously and vigorously for 5-7 minutes. The mixture will go from bubbly to glossy.

  5. Once the mixture begins to lose its glossy appearance, immediately ladle into 3” piles onto two parchment-lined baking sheets.

  6. As the pralines cool, they will become a hardened, but not chewy, candy. If they remain glossy and chewy, they did not reach 234°f.

Please remember to be very careful as boiling sugar is one of the most painful kitchen wounds you can fall victim to; always wear protective mitts when stirring boiling sugar.
