Waldorf Salad

 

Originally created at New York's Waldorf-Astoria Hotel in 1896, not by a chef but by a maitre d'hotel, Oscar Tschirky a.k.a. "Oscar of the Waldorf." The Waldorf Salad was
an instant success. The original version of this salad contained only apples, celery and mayonnaise; nuts were added roughly ten years later.

Essentials

3 GRANNY SMITH APPLES, PEELED AND CUBED

2 TABLESPOONS VEGENAISE OR MAYONNAISE

1/2 CUP ORGANIC CANE SUGAR

JUICE OF 2 LEMONS

1 CUP WALNUTS OR PECANS, FINELY CHOPPED

Directions

  1. In a medium mixing bowl, add apples, celery and walnuts; set aside.

  2. In a small mixing bowl, add Vegenaise or light mayo, sugar and lemon juice; whisk until
    sugar dissolves.

  3. Pour dressing over apple mixture and toss well to coat evenly.

  4. Chill and serve.
